Olive oil is a natural and healthy product used since the Antiquity. Here, the most cultivated olive variety is the “Picholine.” That fruit is characterised by a long and thin core, enclosed by a firm flesh. Collected green in September, mouth olives are to be enjoyed for appetizer. Their flesh is firm, juicy, and crispy all at once, with hazelnut butter taste. In the middle of winter, when the olives are mature and have turned black, we collect it in order to extract the oil with a simple cold pressing. The originality of this olive oil comes from its aromatic intensity accompanied by an acknowledged fiery bitterness. The producers have obtained the labelling AOP of their productions.
Many products from the olive tree and many flavours are to be discovered at the olive oil cellar of the "Moulin de Villevieille" (windmill of Villevieille) and at other producers.
