Domaine des Sauvaire
The family estate has been carrying on the tradition of their distant ancestors for over three centuries. Beautiful stone buildings dating back to the end of the 16th century have undergone numerous extensions. The vaulted sheepfold testifies to its agricultural vocation, but it was also used as a post and coach house to link the coast to the Cévennes. A beautiful square tower with a restored spiral staircase adds character to the ensemble.
The Sauvaire estate benefits from its proximity to the sea and the foothills of the Cévennes. This 26-hectare vineyard is planted mainly with Mediterranean grape varieties on deep soils made up of sandstone, clay and limestone, with controlled yields that produce a rich, intense wine. Parcels of scree from the Ice Age in limestone sandstone terroir, a Languedoc hillside with low yields and intense, powerful aromatic complexity combining very ripe red fruit, fugue, candied fruit, thyme, black olive, liquorice and pine needles... And for some, a subtle taste of cocoa!
Sold at the Coteaux du Languedoc and AOC Languedoc Sommières wine cellars, and Cévennes PGI wines.
